Bacon, Egg, and Cheese Breakfast Biscuit

This is exactly what this site is all about. Delicious, fast, and virtually no cleanup. It’s breakfast, all in one place, and all at the same time. Check it out:

NOTE: Makes 10 biscuits: 86 Calories, 3.3g Fat, 10g Carb, 4g Protein

Cook Time:
15 minutes

1 pack Pillsbury buttermilk biscuits (the small ones)
2 eggs
1/4 cup cheddar cheese
2 strips of lean bacon/turkey bacon (you can also use a couple sausage patties, it will still work, you’ll just need to cook them first)

What You’ll Need:
1 cupcake pan

  1. Preheat oven to 450 degrees.
  2. Place the biscuits into a greased cupcake pan.
  3. Tear bacon into shreds and spread evenly over biscuits.
  4. Scramble 2 eggs in a bowl with salt and pepper.
  5. Pour eggs evenly and sprinkle cheese over biscuits.
  6. Place the tray into the oven for 10 minutes.

Take them out of the oven and put a few on a plate. Should feed a couple. Enjoy, dudes!

    Thanks Joe! Also, don;t be afraid to try it with sausage or turkey bacon. They all work and taste just as good. Stick with turkey sausage or turkey bacon if you want it to be a little healthier.

    OK, i just made this. I decided to use cupcake wrappers to ease clean up- i won’t do that again. I estimated the egg pouring badly, so i used 3 eggs and still have two with no egg. I used three pieces of turkey bacon. You didn’t specify if i had to cook the bacon first, so i did just to be sure. They are super yum, great idea, and very quick and easy. I will try not to finish them tonight.

    Don’t forget that the bacon and/or sausage needs to be cooked before placing it into the tin…

    JB/Zach –

    when I made it I actually didn’t cook the bacon – I didn’t drown them in eggs eithe. The oven cooked the bacon fully and it was crispy. The sausage may need some cook time. I’ll play with it later!

    I used 8 eggs and cut the biscuits in half before i put them in the pan (wanted more egg and meat than biscuit). I cut up precooked sausage links and put those in. Really good.

    Just made these this morning. SO good! I used breakfast sausage patties & pressed into the biscuit in the bottom. Then, I also used 8 eggs, since I really felt like 2 wasn’t going to stretch over the 10 biscuits. They came out just like popovers! Light & airy in the center. I think this may be due to the extra eggs? LOVED them.
